Well guys,
I tried a recipe yesterday in the thermowell and it came out very tasty.
So here goes the recipe:
l cup flour
l teaspoon salt MIX THESE THREE
l teaspoon pepper TOGETHER
l Chicken ( 4lbs) cut up
2 medium onions sliced thin
3 shallots sliced
8 ounces sliced fresh mushrooms of your choice ( I used baby portabellos)
l clove garlic sliced
3 carrots cut on the angle
2 ribs celery cut on the angle
l bay leaf
1 teaspoon salt
l teaspoon pepper
1 cup white wine
1 cup chicken broth
3 tablespoons butter.
Dredge the chicken in the flour mixture and brown in vegetable oil in pan. I did this in a seperate pan so I could easily discard the extra oil. Meanwhile I melted the 3 tablespoons of butter in the large kettle and lighty cooked the onions , shallots and garlic (about a minute)to give it that carmalized flavor. I removed the onion mixture and put in chicken, carrots, mushrooms, celery, and bay leaf. Topped with the onion mixture and added the wine and chicken broth along with the salt and pepper. Cooked in Thermowell for 25 minutes of gas and 1 1/2 with gas off. Remove Chicken and place on platter and top with veggies. I used a fat strainer for the juices and than thickened with a roux. ( 2 tbsp of butter with one tbsp flour cooked over a low heat till light brown and than add liquid while stirring)
I served the chicken, veggies and gravy with couscous.
By the way you can use different seasonings with this dish. ( tarragon, herbs de provence, thyme, rosmary)
This is a simple version of the French Coq Au Vin.

I made this last night and it was really, really tasty!
Too bad we can't have taste testing at our virtual convention. I'd be first in line at Virginia's (aka treatmaker) Chambers!!

Ann,
Thank you for the words of praise. I have to say that being on this chat board really has inspired me to try out recipes in the thermowell so there will be more coming. The board got my creative juices going! I'm going to adapt my saurbraten and red cabbage recipes for the thermowell next so be on the lookout next week.
